  • Cath Kerry – Art Gallery of SA - PRESIDENT

Cath Kerry operated a successful catering business in Adelaide since 1982, from small cocktails and dinners to large corporate events for the Adelaide Grand Prix, the Adelaide Festival of Arts, Opera in the Outback, specialising in doing the impossible in impossible situations.     

She was at Bridgewater Mill for three years from 1984 to 1986, as head chef and was responsible for setting up the restaurant’s equipment and function packages.

Cath currently operates the restaurant and catering contract in the Art Gallery of SA specialising in catering for the wedding market.

She has given demonstrations and headed seminars on food nationally and overseas.  She is an original convener for the Australian Symposium on Australian Gastronomy in Adelaide.  She has been a consultant to re-style and improve function and catering facilities (eg. the Adelaide Entertainment Centre).

She is a Food Stylist for film and still photography, has written on food for national magazines such as Gourmet and HQ magazine.

She became a trained Art Gallery Guide in 1992.  Away from the restaurant, she has a strong academic interest in food and enjoys preparing lectures on the history of food, food in painting, the decorative arts and the history of manners and entertaining.

Her book ‘The Haigh’s Chocolate Book’ was published in 1998, which is a history of chocolate and in particular of the Haigh’s family, an Adelaide institution (and is in its second printing.  She is currently working on the Art Gallery Restaurant cookbook.

She was awarded Lifetime Achiever Status from the R&CSA in 2006 and has been an active member of the Board of Directors since June 2003.

 

  • Camillo Crugnale – Assaggio Ristorante – VICE PRESIDENT

Camillo Crugnale is an Adelaide trained chef from Regency Park Tafe College with over twenty-five years of experience. Everything he has achieved has been a result of learning from others. Especially responding to customers’ desires, most of all, knowing so strongly what he wants from food especially Italian food. He currently is in partnership at Assaggio Ristorante at Hyde Park and Assaggio Café at Newton and has operated many of Adelaide’s most popular eateries over the years. He is an active participant in many food festivals and has also conducted and participated in the delivery of numerous seminars introducing Italian cuisine to a broad cross-section of the community especially children over ages of 7 with his daughter and mother. He is well respected for his long involvement with helping United Nations, Camp Quality, SA Variety Bash, Hutt St Mission, Water Aid fundraising and most recently been appointed as the ambassador for the OzHarvest program that utilizes left over foods by feeding the homeless. Camillo has been recognised in Italy by Academia Italianna Della Cuccina in Milan in 2007 along with many other SA Restaurant & Catering nominations over the years. He is passionate about his industry and has been a member of the R&CSA committee for the past two years.

 

  • Terry Soukoulis – Auge Ristorante – Immediate Past President & DIRECTOR

Terry Soukoulis has owned and operated Auge Ristorante since 2001. He won the R&CSA Employee of the Year in 1999 and was manager of Eros Ouzeri in 2000. At Auge he has been a mentor for many young entrants into industry in South Australia. He continues to invest in training, ensuring the highest level of service and customer care. For hospitality in South Australia, he has become the epitome of the young brigade of hospitality professionals, continuing to invest in quality in produce, shop fit, crockery, cutlery and glassware and most importantly in training to sustain the high levels of service required for fine dining Italian fare.      
One of the few restaurants in Adelaide to invest in a sommelier to ensure a diverse and high quality wine list, he is a highly regarded member of the Association and the restaurant community and is highly deserving of the accolade of Restaurant of the Year in 2005, 2006 & 2009, as well as Best Italian Restaurant in 2003, 2005, 2006, 2007, 2009, 2010 & 2011.

 

  • Peter Morelli –Adelaide Festival Centre - TREASURER

Peter Morelli has been involved in the Hospitality Industry in Adelaide for more than 25 years, is a graduate of Regency College, Certified Professional Restaurateur (CPR) and R&CSA board member for 6 years serving the last 2 as Treasurer of the association. Peter was also the founding Chairman of the Gouger Street Traders Association and past vice-president of the SA Wine Press Club. Peter's current role is Food & Beverage Manager of Adelaide Festival Centre and previously managed the Food & beverage operations at SKYCITY Adelaide. Prior to that he was  Food & Beverage Manager of the Adelaide Entertainment Centre (AEC), leading the AEC's functions team to Hall of Fame recognition at 2006 Awards for Excellence. Having worked at many of Adelaide's leading restaurants and hotels Peter understands the challenges involved in running a busy, profitable business in a sensitive, competitive market.

Peter's experience and knowledge has contributed to the successful "Dine Where You See the Sign" marketing campaigns and the current sound financial position of the Association.

 

  • Judyta Musolino – Phore Seasons Restaurant - DIRECTOR

Judyta is the owner and head chef of Phore Seasons Restaurant in Semaphore SA.

She is nominating herself as a Committee Member of the Restaurant and Catering Association SA for 2009. Her passion and dedication to the food industry is a driving force and she hopes to inspire, motivate and support anyone who feels the same way.

Restaurant and Catering Association is paramount and an invaluable umbrella to the whole of the hospitality industry – nominating herself to be a committee member shows that she supports the industry and want to assist and enthuse others. She has been sitting on the R&CSA board since November 2009.

 

  • Barbara Derham – Derham Consultants - DIRECTOR

Barbara Derham has spent well over 30 years immersed in community service, Local Government, international and local business, and promoting South Australia – and she has no plans of slowing down any time soon.

For more than 30 years Barbara was a leading figure in the Whyalla business community, the regional city she called home from 1968 to 2005. In amongst this, she held down top positions within Australia’s biggest independent accommodation group and the fourth largest in the world, Flag International.

It is hardly surprising that Barbara found her way into a successful career in hospitality – as Barbara herself says, she was “born into the industry”, her parents being hoteliers both in regional areas and in Melbourne.

For 15 years Barbara ran the Alexander Motor Inn until 1985, when she sold it and took over another Whyalla business which became known as Derham’s Foreshore Motor Inn. With the support of her second husband, Barbara ran this business for a further 20 years, finally selling the lease in late 2005.

In 1988 Barbara took out the SA Great Award for outstanding service to South Australia. She was also Westpac Business Woman of the Year 2001 and in 2005 took out the SA Tourism Award for Most Contribution to Tourism. Barbara is also a recipient of Tourism Training Australia’s Tourism Industry Legend Award.

After selling the lease to Derham’s Foreshore Motor Inn in 2005, Barbara had a well-earned break but total retirement was never going to suit her personality and she soon felt the urge for another challenge. The opportunity to purchase Blanc Seafood & Wine Restaurant came up. Although she had eaten at Blanc only once before Barbara was immediately attracted to many aspects of the venue – from its sense of warmth, to its formal yet casual style. As well as running Blanc, Barbara still maintains an active involvement in various groups and committees. She is part of Minister Jane Lomax-Smith’s Tourism Round Table, as well as Chair of the Area Consultative Committee for the electorate of Grey, which makes up 92 per cent of South Australia. Barbara is also currently the only SA director of the Hotel Motel Accommodation Association.

Barbara has a passion to train young people in hospitality and to help them realise what a rewarding career path it can be. After her vast experience in the industry she feels a responsibility to share and pass on all that she’s learnt.

 

  • Michael Sfera – Sfera’s Park Suites & Convention Centre - DIRECTOR

Currently Michael is General Manager of Sfera’s Park Suites & Convention Centre, a Consultant, Author and Board Member of Adelaide Convention Bureau.  He also has various local community and charity fundraising roles and over the years has acquired business (tourism & hospitality) and training qualifications. 

He is an innovative progressive thinker and can contribute in a variety of ways to the board. Some examples would be the opportunities for the restaurant industry to work closer with the tourism sector, inclusive of business conventions, major events and leisure tourism, as well as any practical opportunities to reduce red tape in our industry. He is also supportive of increasing awareness within the community of the importance of the restaurant, event and hospitality industries.
